You know those mornings when you're just so distracted, that breakfast becomes a secondary thought? Yeah, I spent too long streaming the Colbert Report and researching leave-in conditioners. Then, I had 20 minutes to make breakfast, dry hair, and be out the door.
Squish those to the bottom of an oiled muffin tin. When's the last time that you used meat for a crust? Never? Oh...well, get to gettin'.
Crack an egg over each slice of canadian bacon. Preheat oven to 350 degrees. If you want a semi-soft yolk (like me!), cook for approximately 10 minutes. A full 15 minutes will ensure a hard-boiled yolk, so adjust accordingly.
Get ready for some amazing breakfasts and snackies this week, cuz' these are really good on the fly. Enjoy!
